Muffins using your shake mix & protein pan cakes

Here is a few recipes to make some healthy snacks. This is using the Admin Censored shake mixes & protein powder. I'm sure you can modify to use your own shake mixes what ever they may be. The brand of protein shouldnt make a difference.

Caramel or Vanilla Le Rice Dairy Snack 97% Fat Free2 eggs
1/4 cup canola oil
1/2 cup skim milk
1 tsp baking powder
1 1/2 cups self raising flour
1 cup Formula 1 Vanilla (shake mix)
2 big tblspn Protein Powder
1/4 cup sugar or less ( depending on how sweet you like them)

Whisk eggs in a large bowl, mix all ingredients in, gently mix, spray mini or med to large muffin pans with cooking oil, spoon in mixture only half to 3/4 fill each pan. Cook in 180 deg oven till when muffins just spring back when touched.
Do not over cook, they are nicer not too browned, still looking white and only very slightly brown. Mini Muffins cook for around 10 mins. Large cook for around 20 mins. These also freeze very well in an air tight container

Protein Powder Pancakes.
2 Eggs.
½ Cup high quality creamed cottage cheese. Low fat of course.
¼ Cup self raising flour.
4 Tablespoons Admin Censored Protein Powder.
½ Cup skim milk or water add more if too dry
Canola oil spray.

Beat the eggs, add the cottage cheese and stir until creamy & smooth. Add Protein Powder, flour, milk or water and blend well. (Consistency should be a bit thicker than a standard pancake mixture.)
Spray hot frying pan with canola spray and cook as you would traditional pancakes. Serve with ½ cup
of fruit, honey & low fat yogurt, or Vitari.

Choc-Raspberry Shake Muffins
1 cup Wholemeal self-raising flour
1 cup Chocolate Formula 1shake mix
2 Egg whites
½ cup Soymilk or normal milk
2 tbsp Cold pressed oil
Mixed Spice
Cinnamon
Macadamia nuts (roughly chopped) - just a handful - optional
200 gm Raspberries (tinned is fine) - drained

Sift the flour, Formula 1, and spices. Add the chopped macadamia nuts to this dry mixture. Beat the egg whites, and then add the oil and Soymilk. Beat again. Pour this liquid into the dry mixture and combine well. Add the drained raspberries and combine well. Lightly grease the muffin trays and spoon the mixture into each cup. This will make 10-12 muffins. Bake at about 180° until cooked (usually about 20-25 minutes).

Choc Banana Shake Muffins
1 cup Dutch Chocolate Formula 1 shake mix
2 eggs, beaten
½ tsp. Bi-carb of soda
4 ripe bananas, mashed
1/4 cup sugar or use Equal equivalent to keep the calories down
½ cup canola oil
2 cups self-raising flour
½ cup low-fat milk

Preheat oven to 180c. Place muffin papers into a 12-muffin cooking tray.

Sift flour, bi-carb of soda and Formula 1 Into large bowl. Add sugar, mix thoroughly, and make a well in the centre. In a separate bowl, mix together the rest of the ingredients, then add them to the dry mixture. Stir until all dry mixture is absorbed, do not over mix. Spoon mixture into muffin papers, and bake for 25-30 minutes, or until muffins spring back when touched.

Strawberry Shake Muffins
1 cup Berry Formula 1 shake mix
1/4 cup canola oil
1/4 cup sugar or use Equal for lesser calories
2 eggs, beaten
1 cup low-fat strawberry yogurt
2 tbsp. Lot-fat milk
1 punnet or 1 tin strawberries, chopped/drained
2 cups self-raising flour
½ tsp. Baking powder

Preheat oven to 160c. Place muffin papers into a 12-muffin cooking tray.

Sift flour, baking powder and Formula 1 into a large bowl. Add sugar, mix thoroughly, and make a well in the center. In a separate bowl, mix together the rest of the ingredients, then add them to the dry mixture. Stir until all dry mixture is absorbed, do not over mix. Spoon mixture into muffin papers and bake for 30-35 minutes, or until muffins spring back when touched.

Banana Shake Muffins
1 cup French Vanilla Formula 1 shake mix
2 ripe bananas
½ cup canola oil
2 eggs, beaten
½ cup low-fat milk
1 ½ cups self-raising flour
1 tsp. Baking powder
1 cup rolled oats
1/4 cup sugar or Equal equivalent

Preheat oven to 180c. Place muffin papers into a 12-muffin cooking tray.

Sift flour, baking powder and Formula 1 into a large bowl. Add sugar, mix thoroughly, and make a well in the centre. In a separate bowl, mix together the rest of the ingredients, then add them to the dry mixture. Stir until all dry mixture is absorbed, do not over mix. Spoon mixture into muffin papers, and sprinkle tops with extra oats.
Bake for 25-30 minutes, or until muffins spring back when touched.

Apple Shake Muffins
1 cup French Vanilla Formula 1 shake mix
2 cups self-raising flour
1 tsp. Cinnamon
½ tsp. Baking powder
1/4 cup castor sugar or use Equal instead
1 cup low-fat vanilla yogurt
2 eggs, beaten
½ cup canola oil
1 ½ cups pie apples

Preheat oven to 180c. Place muffin papers into a 12-muffin cooking tray.

Sift flour, baking powder, cinnamon and Formula 1 into a large bowel. Add sugar, mix thoroughly, and make a well in the centre. In a separate bowl, mix together the rest of the ingredients, then add them to the dry mixture. Stir until all dry mixture is absorbed, do not over mix. Spoon mixture into muffin papers. Bake for 30 minutes, or until muffins spring back when touched.
