ONCE A MONTH PPOT LUCK

Any ideas on what to take to a once-a-month finger food pot luck lunch? The majority of what they have is savouries (sausage rolls and pizza) or sweets!

why not make a nice healthy dip with some lavish bread riped up and lightly cooked in the oven? always goes down a treat and depending on the dip can be reasonably healthy too

I like the idea of a dip as Mumnbub suggested.

If you want to make finger-food you could always make rice-paper rolls. There's a recipe here. If you want to make it vegetarian safe you can substitute marinaded tofu for the chicken. I recommend using a plate of cold water to soak the rice paper in instead of the hot water outlined in the recipe. I find that if you soak them in hot water they tend to fall apart as you pull them out. Cold water takes longer to soften the rice paper, but it holds together better.

I find its easier to lay the rice paper on the plate and using a pastry brush just brush it with hot water, turn it over and do the same, then its nice and soft when you need to roll it up- never soak it anymore

Ooh, that's a great tip Mumnbub! I'll definitely try that next time. Soaking it in a plate full of water can get quite messy at times. :D
