If you love stir-fries like me, but also LOVE the rice or noodles that go with them but are trying to cut back on carbs, subsitute noodles with bean sprouts instead - they look and taste almost the same as noodles but have NO carbs and hardly any calories. They fill you up too!
I often want to have Hokien noodles and although I don't have a problem with carbs in this case I do have a problem with stopping at one serving. They are just so yummy. So I tend not to have them at all but the sprouts idea...mmm.

I've heard of people using bean sprouts as pasta! Apparently they are delish boiled and then covered in pasta sauce (I'd use crushed tomato personally, don't see the need for pasta sauce!!), mushrooms and cheese!
