So today I slept in until around 12.30 which is very unlike me... Considering I usually get up at around 6am every day and eat a big breaky at around 7am. I think my body was telling me that I needed a well earned rest from working so much.
In saying that, my food diary today is a bit boring.
I woke up and had a chamomile tea, my multivitamin, 2 fish oil tablets and an inner health plus.
I was suffering from a pretty bad headache and I know it's due to the fact that I hadn't eaten anything, and I really needed some water.
I then had an orange, and some carmans muesli with some jalna yogurt along with a big bottle of water.
I didn't really eat anything else until dinner, which was home made chicken parmas and veg.
I crumbed the skin-off chicken in quinoa crumbs and lightly pan fried them in some extra virgin cold pressed olive oil. I made the tomato layer with salt reduced tomato paste, freshly chopped oregano, dried garlic and basil and some canned diced tomatoes (salt reduced). I topped that with some light honey leg ham, semi sundried tomatoes and some light mozzarella cheese (which I don't use a lot of, my boyfriend gets extra though
) and browned it under the grill.
The boy devoured his, and he got a side of chips too! (I pinched one, hehe) I couldn't even finish mine but I ate most of my veg and I feel really proud of myself for learning how much to eat before I feel sick.
