there are no rules with salad. They don't have to involve lettuce if that's the issue. Try a 5 bean mix tossed with finely diced capsicum and celery (whatever takes your fancy) with a bit of lemon or lime juice for a bit of zing. or just finely chop up capsicum, tomato, radishes, celery (again anything that takes your fancy) for a more salsa-like affair. ( I personally don't like oils on my salad dressing, just some nice vinegar or citric juice. orange juice is good for a change, oh and some cracked pepper)
To vary a normal salad, try mixing in some fruit - finely sliced orange, dates or apple work well.
Tabouleh (sp?) is an oldun but a goodun. Finely chopped onion (salad onion works best), tomato, lots of parsley and burghul (cracked wheat) take the bughul, soak in the same measure of boiling water (I think, but check on the packet) until absorbed then mix with other ingredients and lemon juice to taste....yummmeee!
