Dani i do believe you can lose a fair amount doing your plan but you are wanting to lose 1.5kg min each week to get the 10kg in 40 days. A healthy weight loss rate is 0.5 to 1kg a week. If the weight comes off slowly it will be harder to put back on. Maybe instead of focusing on 10kg you should focus on toning as well. Doing exercise you are sure to put on muscle and muscle is heavier then fat but denser. So although you may look like you have lost weight the scale may not say it so take measurements!
Your diet for the next 40 days looks great. Its not just apples that you should keep the peel on, all vegies have the majority of nutrients just under the skin. If you have potatos, or pears etc leave the skin on.

Preparing food for grazing children is also a danger time for me.
My suggestions ia cut up some carrots and capsicum to snack on, they are sweet and healthy a great snack.
Or if the kids don't like that get icy poles, the lemonade ones are 45cals each and billabongs are 99cals each, a yummy treat for in summer.
