I'm not the worlds best cook and I never know what to try....SO, I thought I'd start a new thread! Let me know your favourite healthy (and preferably easy!) recipes!! :P

Place a whole chicken breast on a piece of aluminium foil, add salt, pepper, crushed garlic and a squeeze of lemon juice. Wrap in foil and put into a 200 degree oven for 30-35 mins. Do another chicken breast for another serve. When cooked cut into bite sized pieces.

Dice butternut pumpkin into 1cm pieces and place on baking tray
liberally apply black peper to pumpkin
roast for 25 mins in 200 degree oven

In a bowl place baby rocket leaves, sliced red onion, halved cherry tomatoes, cooked pumpkin and chicken pieces. Sprinkle with Balsamic Vinegar to taste and serve.

Quick Chickpea Pasta

This is so simple, it doesn't even need a recipe!!! Boil up some pasta (I prefer wholemeal)), put that aside as you cook the sauce - in a fry pan, cook up some diced onion & garlic, add some canned crushed tomatoes (I use 100g) and chickpeas (I use 75g) and simmer until it's heated through. Chuck on top of the pasta, add some cheese if you like, and voila :D It's delicious!

You can do variations by substituting the chickpeas for lentils, four bean mix, red kidney beans etc etc.. With lentils I love to add a bit of cumin and turmeric to the onion & garlic :)

bferbear that is a delicious recipe!

Well my healthy recipe is for homemade pizza. Just get a thin baazars pizza base top with healthy things, I like some cooked chicken breast, avocado, sundried tomatoes and a bit of Mozarella or feta. YUM. I do all sorts and it can be really healthy by just adding vegies and very little meat.

This takes 15 minutes to make. Very quick and easy.

Vegetable filo tarts.

Ingredients:
-frozen corn, peas & carrot (you can buy this in a mixed bag)
- half an onion diced (a whole one if small)
- filo pastry
- light cheese
-muffin tin tray.

Method:
- fold filo pastry into a square and place into pan
- lightly fry onion with crushed garlic until lightly browned. Add the veggies and cook until thawed.
- scoop veggie mixture into the filo sheets
- add cheese on top and back until filo pastry is a nice golden crisp colour.

Ok this one isn't so quick but it is worth the effort.

Baked chicken breast stuffed with spinach, cheese & bacon in a tomato base sauce.

Lay out a chicken breast fillet & hammer out so it is thin & easy to roll. Place long the middle baby spinach leaves, about 1 tablespoon of light ricotta cheese & diced bacon. Sprinkle with rosemary then roll up.
Place chicken breast in an ovenproof dish then cover in tinned crushed tomatoes, crushed garlic clove then put in oven (with lid on) at 200 degrees for 1 hour. Make a small cut in the thickest part to see if cooked through.

Serve chicken breast with a small amount of the sauce, sprinkle with parmasen cheese & serve with veges.

(Because it is baked in a sauce it doesn't dry out & is so tasty)

Chicken Pizziola

Ingredients
Chicken breast (thin like schnitzel)
tomato paste
mushroom sliced
capsicum sliced
tomato diced
onion sliced
orogano
basil
light mozzorella

Method
mix together the veg with herbs
smooth a thin layer of tomato past ontop of chicken
spread a generous layer of topping on top then top with a small amount of motza and place in oven to bake for about 30-40 minutes on 180 or until chicken is cooked and cheese browned.
yummy. you can add whatever pizza topping you like really. Easy as.

but the pasta sauce cant be good for you??? i love chicken parm??? its sooo good i would die for one if i knew i wasnt going to put on weight??

If you check the ingredients Anthony, a lot of pasta sauces are just tomatoes and other veggies - mushrooms, garlic, capsicum....YUM! :P

I just decided I'm going to go for this tomorrow night for dinner :mrgreen:

It's usualy bad for you because the chicken is crumbed and shallow fried then has mountains of full fat cheese. Check the pasta sauce jars and you'll be suprised.
