How calories is preferable for a adult like me having 22 years going through the vegan diet to get back in shape?

it depends on what you current weight....avg consumption per day is approx 2000 cals.
To maintain a healthy weight, you need to balance the amount of calories you consume through food and drink with the amount of calories you burn through physical activity.
To lose weight in a healthy way you need to use more energy than you consume by eating a healthly diet with fewer cals and increse your activity.

I am taking 1500 calories per day which is less than the average consumption. Shall include more calories to my diet or stick to the previous food plans?

Stick to your plan. If you are losing weight you can stand less calories per day. When you are maintaining then you can up the intake.

I am trying to lose weight but it's going in vain. Some says it's due to plateau. Can anyone tell me what exactly a plateau means?
