Well it's been a while since I last checked in - but so far I'm doing really well!
Found a new motivational piece that I've put up at my desk "Weight loss is not meant to be a sprint, it's a marathon!" LOVE IT.
Today was Mothers day and I took Mum out for lunch to a small cafe in the bush, we had a lovely lunch of warm chicken salad with arancini balls - very delish and then finished off with a coffee and shared passionfruit custard tart - one of the best things I've tasted in a long time.
Along with finishing assignment 1 of 3 over the weekend, I did a lot of cooking and tried out a new recipie which didn't turn out
But I've got my choc-banana muffins in the freezer, potato, leek and bacon soup packed up an in there as well and I made Teresa Cutters Healthy Golden Delicious Apple cake, but it just didn't turn out at all and looked pretty awful on the inside - so I must have done something seriously wrong because I've tried some of her other recipies and they were great. Anway, I like making and trying new things but will cross that one off the list.
For dinner tonight it was a light dinner of Home made French onion soup with a crusty roll toasted with parmasen and it was might damn fine! Went for a 45min walk also today so I'm ending this weekend on a pretty high note.
Now just to finsih assignment 2 and 3!
