Haven't had a good couple of days, can't seem to control my eating...I've been feeling constantly hungry and I can't seem to get back on track...wondering if I should have a couple of maintenance weeks, until I feel in control...

Kinda back on track, all fluid bar 100g is gone.

Wow, Czarina you've done so well! I've only managed to lose 5 kg and just got around 4.5 to go... You've inspired me to keep on going.

You're right, it is a new year, and I'm feeling a lot better about things now. :D Feeling motivated to rid myself of these last few kilos!

Had a good weekend - it was binge free. Feeling good about my eating at the moment. I have a lot of meals for the week planned out, which makes things a lot easier!

It's Beef and Potato Casserole tonight (with Honey Mustard steamed veg on the side), Mexican Capsicum and Kidney Bean Soup tomorrow, and options for the rest of the week include Chicken Risotto with Lemon and Spinach (no need for cheese and butter in that one :mrgreen: !), Stuffed Eggplant, Baked Kidney Bean Pasta Sauce on wholemeal pasta and Stir-Fry with fresh Rice Noodles and some sort of protein...so, I have no excuses!

The fruit bowl is also overflowing and the fridge and pantry are stocked with lots of other healthy goodies. We did an awesome grocery shop yesterday, spent around $150 and we are fully stocked with healthy food, cat stuff and other household essentials. Yay for NQR and Aldi! I don't know how we'd get by without them!

I can't believe you've lost almost 50kgs, that's so amazing! It gives me a lot of hope, as that's about how many I need to lose in total too. Very inspiring stuff!

You have done so incredibly well, Czarina! Good on you! The Mexican capsicum and kidney bean soup sounds utterly delicious. I'm off to Google for a recipe!

I reduced the amount of olive oil to one or two teaspoons, omitted the basil (as I didn't have any, I want to try it with!) and used vegie stock rather than chicken. I also upped the amount of of Mexican chilli powder and used NAS kidney beans. It is delicious, and low in calories. Yay! :mrgreen:

Glad you liked it! It's just so easy and yummy. :D It also works fabulously well in the slow cooker, as long as you don't add the beans too early.

Ooh, that would be good! I didn't cook it for that long so that the capsicum would stay crunchy, a bit like gazpacho. Next time I'll cook it for a long time and see what it tastes like. :D

How is your week going so far, Czarina? Any plans for Australia Day?

My week is going as well as can be expected, considering I am getting ready to go to work. :lol: Unfortunately I am also working Australia Day...at least it will be a decent pay rate! Are you getting up to anything exciting?

Just writing the next chapter of my thesis. Unfortunately I've discovered the 'unique perspective' I was going to make key to the chapter has already been covered in other literature. So I'm desperately reading everything I can to find a new gap to address. Not sure if I'll take tomorrow off or not. I have a hell of a lot of writing to do!
