Baked sweet /potato with kinda mashed Edgells four bean mix (cooked with spray olive oil, ground cumin, ground coriander and thai red curry paste to taste).
Then whatever I have on hand or fancy goes on top, like cooked tomatoes or chicken breast, egg, roasted capsicum.
Very quick, easy and in-expensive and for how tasty it is its amazing that it's healthy.
Moderate to high in calories, but I just have a small amount and that would be a main meal. It's my alternative to greasy hangover food, too.
