hey everyone there is a beautiful recipe for a sweet potato beef and capsicum curry in a magazine this week however it says to add coconut milk. i dont like it all or anything to do with coconut so is there anything i should substitute it with? or would it be fine to leave it out?

my friend uses light evaporated milk and adds some coconut essence to get the same flavour when she does curries, I think there is light coconut milk on the market too but Im not sure of the fat content

thanks girls will try the light evaporated milk- i dont like coconut flavouring or even malibu or that reef suntan lotion- i hate the smell and taste of coconut lol
