my mum does similar but with pumpkin or sweet potato. She usually does a ricotta/spinach/egg/garlic mix in between the layers of vegies and sauce (that mix is really good for normal lasagne and canneloni too (sauce/pasta/spinach mix etc)which are my special occasion dishes).
Incredibly delicious and flavoursome, especially if you augment the pasta sauce with other vegies (I fry up onion, garlic, capsicum, tomato, zuchinni, broccoli and mix the pasta sauce in)
