My sister got me a cookbook for my birthday: It's called The Complete Book of Modern Classics and it's an Australian Women's Weekly cookbook published by APC in 2006.
I found this recipe for a Chocolate Fudge Cake, and mum is going to make it for my birthday dinner with my family tomorrow night, so I can tell you all how it was!
Chocolate Fudge Cake
Prep - 20 mins
Cooking - 40 mins
Serves - 8
85g dark chocolate, chopped finely
1/2 cup cocoa powder
1 cup firmly packed brown sugar
1/2 cup boiling water
2 egg yolks
1/4 cup almond meal
1/3 wholemeal plain flour
4 egg whites
1. Preheat oven to moderate (180degC or 160degC fan forced). Line base and side of deep 20cm round cake pan.
2. Combine chocolate, cocoa, sugar and water in large bowl and stir until smooth. Add egg yolks and whisk to combine. Fold in almond meal and flour.
3. Beat egg whites in small bowl with electric mixer until firm peaks form. Gently fold egg white mixture into chocolate mixture, half at a time. Pour mixture into prepared cake pan.
4. Bake, uncovered, for 40 minutes. Stand in pan 5 minutes, then turn onto wire rack and remove paper.
Serve warm, dusted with icing sugar and fresh strawberries.
