Cauliflower with Mustard

This is a very tasty dish, and quite healthy as long as you're sparing on the oil. I have no doubts that it would be fantastic with mixed vegetables, not just cauliflower too.

2tsp yellow mustard seeds
2tsp black mustard seeds
1tsp ground tumeric
1tsp tamarind puree (i just use lemon, lime, even grapefruit!)
2-3 tbsp oil
2 garlic cloves, crushed
1 onion, chopped
600g cauliflower, broken into small florets
3 mild green chillis (or to taste) finely chopped

Grind mustard seeds (either grinder or mortar and pestle) and combine with tumeric, tamarind puree and about 100ml of water to form a smooth, quite liquid paste.

heat oil in a large saucepan and fry garlic, onion, chillis (I also add ginger). Add cauliflower and fry till lightly browned. Sprinkle it with the mustard mix and bring to boil even though there's not much liquid. Reduce heat to low and cover and cook until cauliflower is tender and sauce is dry. Sprinkle with water as it cooks to stop it sticking.

Season with salt and remove from heat. Serve with rice, or indian bread or as an accompaniment to a meat dish. I like to have mine with steamed vegies.
