Makes 12 muffins
1 1/14 cup Wholemeal Self Raising Flour
20g Sugar/Sweetener (I used CSR Smart Sugar)
100g Uncle Toby's Bran Plus Cereal (or All Bran)
1 1/4 cup No Fat Milk
1 Large Egg, lightly beaten
1/4 cup Apple Sauce
1. Soak the Bran Plus and milk in a separate bowl together to soften the cereal.
2. In another bowl, combine the flour, sugar/sweetener, applesauce and egg.
3. Add Bran Plus and milk to the dry ingredients and mix together with a spoon until just combined (don't over mix or the mixture won't come out very nicely!!!)
4. Pour into a muffin tin and bake at 180C/375F for 20 minutes (I have a fan forced oven so it may take a little longer)
Approx 400kJ per muffin.
These are great to have for breakfast warmed up with a bit of diet jam, honey or lite margarine on them. They have stacks of fibre and wholegrains!
