Sarah's Carrot Cake Experiment!

Here is a low-fat, low-carb, high-protein, whiz-bang recipe that I just created this morning :D

Ingredients

2/3 cup LSA
3 tablespoons psyllium husks
1 2/3 cup home brand unprocessed natural bran
1/2 cup vanilla protein powder
1/2 cup powdered egg whites (equivalent 9 fresh egg whites)
1 medium carrot, finely grated
1 teaspoon baking powder
1 teaspoon stevia powder
5 sachets splenda
1 tsp cinnamon
1 tsp vanilla essence
1 tsp coconut essence
1 cup water

Method
Combine LSA, bran, psyllium husks, protein powder, baking powder, sweeteners and cinnamon in a large bowl.
In a separate bowl, add the water and egg white powder and whisk together. Add eggs and vanilla & coconut essence and keep whisking.
Add the wet ingredients to the dry and combine well.
Fold through the grated carrots
Bake on 200 degrees for about 15 mins

Nutritional info (get this!)
100 calories
9g protein
3.5g fat
3 g carbs
(makes 12 pieces)

Don't really know how you can get any better than that!! :wink:

Yep, it is delicious! I just made my second batch a couple of days ago. Gonna use that as brekky, as I'm going away for a long weekend :)

It's possibly a bit denser than your regular sugary fatty carrot cake, but still yummy and waaaaayyyyy better for you!

Later, when I have time, I will create low carb cream cheese icing to go with :wink:
