I truly love this soup!! It is so tasty & great for a winter day.
INGREDIENTS:
1 onion
400gms of sweet potato
400gms of pumpkin
2 cloves of garlic
2 tablespoons of curry powder
1 cup of milk
2 cups of water
1 chicken stock cube
METHOD:
Dice onion & slice or mince the garlic. Then place into hot saucepan with the curry powder & saute.
Dice the sweet potato & pumpkin then add to the saucepan with the water & stock cube. Cover & simmer for 20 minutes or until sweet potato & pumpkin is cooked.
Put in blender & blend until smooth. Return to the saucepan & slowly add in the milk. Heat through then serve.
