Low fat Mini Meatloaves

Ingredients
500g extra lean beef mince
1 medium carrot grated
1 medium zucchini grated and squeezed dry
1/2 brown onion finely chopped
1/2 capsicum finely chopped
1 tablespoon chilli powder
2 tablespoon worcetershire sauce
1 slice wholegrain bread as breadcrumbs
2 egg whites
1/3 cup tomato sauce

Method
- preheat oven to 200 degrees. Lightly spray nonstick or silicone muffin pan with cooking spray.
- mix mince with carrot, zucchini, onion and capsicum. Add chilli powder, worcestershire sauce and breadcrumbs. Stir with fork.
- Add egg whites and stir again till well blended.
- Spoon mixture into prepared muffin pans and top each one with tomato sauce. Bake for 25 minutes.

Mixture makes 6 loaves.
Each meatloaf has approx 150 cals.

Has anyone made these yet? They seem yummo but i wondered if 1 tablespoon of chilli powder was too hot??

1 tablespoon of chilli powder is too much, cos i am not a big fan of chilli i only put a small amount. Just like any recipe you can adjust it to what suits you. I think they are alright but i am not a big mince meat fan, my fiance loves them and whats good is they have vegies in them cos he's like a big kid and doesn't like to eat his vegies very mmuch.

Ingredients
• 450 grams of extra-lean ground beef
• 1 medium carrot, shredded
• 1 medium zucchini, shredded and squeezed dry
• 1/2 brown onion, finely chopped
• 1/2 green capsicum, finely chopped
• 1 tbsp chilli powder
• 2 tbsp Worcestershire sauce
• 1 slice whole grain bread as breadcrumbs
• 2 egg whites
• 1/3 cup tomato sauce



Preparation
• Preheat oven to 200C. Lightly spray a non stick muffin pan with non stick cooking spray.
• Crumble ground beef into a large bowl. Add shredded carrots and zucchini, and chopped onion and capsicum. Add chilli powder, Worcestershire sauce and breadcrumbs. Stir with a fork. Add egg whites and stir again with a fork until well blended. You can knead the mixture with your hands but sometimes this makes the meat overly tough.
• Spoon mixture into prepared muffin pan, and top each cup with tomato sauce. Bake for 25 minutes, making sure that the internal temperature reaches 75C.
