Had this one tonight, it's yummy!
Basically you heat 2 poached eggs, with a touch of boiling water around them, until perfect (or however you enjoy them).
Toast two fresh multi-grain or soy lin-seed slices till medium. DO NOT BUTTER.
Cook pasta sauce with onions, garlic and extra parsely in a seperate pot.
Pour mixture of poached eggs on toast, add a touch of salt & pepper and voila!
A healthy meal that will keep you satisfied all evening
I also find that adding some chilli into the tomato-based sauce works nicely too.
