Zucchini Slice

As requested by Dolly

4 beaten eggs
1c flour (I use 1/2 wholemeal, but be sure not to overmix)
1/4 c oil (I'm sure you could reduce this and maybe add milk instead)
1tsp curry
12oz grated zucchini (I don't bother weighing, I just grate usually 1 large to medium sized zucchini, but weigh it the first time then guestimate, and I usually add more than required)
1c grated cheese (I don't use anywhere near that, I just grate a little in, maybe an 1/8 of a cup at most)
1 onion finely chopped
salt and pepper

Sick it all in a bowl and mix to combine (just be sure not to turn the wholemeal into rubber by overmixing). I spray a pie dish or similar with a little oil spray (you don't need much) then bake at around 160-180 degrees C for about 50-60 mins (if your oven is anything like mine, you'll need to rotate it half way through to cook and brown evenly).

This used to be my fave at home. With a yummy salad or steamed/baked vegies...yummo.
