My Quick Lunch Tuna Salad

Rocket and baby spinach, washed
About 5cm x 5cm Greek style feta cheese
1 x 95 gram can tuna (i use tuna in oil cos im addicted to it, could use tuna in springwater)
1/2 cucumber, sliced
Wedge of pumpkin, cut into 1cm cubes
4 mushrooms, sliced
Balsamic vinegar

Put your leaves into a salad bowl, drizzle on a bit of honey and balsamic to taste, toss and set aside

Spread your pumpkin on a plate, season and cover with cling wrap, microwave for 3-4 minutes or until soft. I add my mushrooms in for the last minute to soften them up too but you can have them raw. Set aside to cool a bit.

Crumble feta onto leaf mixture, add tuna (i add a little of the oil to mix with the balsamic as dressing but thats optional) . Throw in slightly cooled pumpkin and mushrooms, toss..... EAT!!!!! :D

Parsley would be a great addition i think ! I'm too cheap for it though ;)
