My version of Eggs Benedict.......

I threw this together for my tea tonight and it was so divine I though I would share it here........

1 tip top wholemeal muffin
2 eggs
1 slice of Kraft free cheese
20 (or so) grams of lean ham
1/2 of a serve of Maggi Hollandaise sauce in the sachet (about 5gms. dry)-just make it up as you would a gravy mix
fresh cracked pepper (or whatever you have lying about), very specific as you can tell :P


Slice muffin in half and toast, poach eggs.
When muffin is toasted put half the ham on each half of the muffin followed by half a cheese slice on each muffin half.
Put a poached egg on each half, spoon half the Hollandaise on each of the eggs and top with pepper. It was yummo in fact I think I might have it again for tea tomorrow night.
Very decadent but low in both cals and fat. Enjoy.

This recipe was inspired by a particular fast food chain who insist on advertising their version on my tv every night :twisted: .

That sounds like a very tasty treat! Maybe for a day when I've had a vegetable-heavy lunch.

Its very nice Whit3y I've had it 3 or 4 times now, from my calcs it works out to around 400 cals depending on the size of eggs you use :D .
