This is a quick breakfast perfect as a replacement for the traditional bacon and egg ‘big breakfast’
for a diabetic or if you’re trying to lose weight.
2 eggs (water and 1T vinegar for poaching)
1 small bunch of English spinach
1 tomato diced
2 slices of ham cut into strips
3 small mushrooms
salt and pepper to taste
Cook tomato, mushrooms, spinach and ham on a low heat for about 5 minutes or until cooked. Add salt and pepper to taste.
Meanwhile poach 2 eggs in a saucepan with water and a little vinegar.
Serve spinach mix on plate and top with poached eggs. Prick egg yolks so they start to run slightly and sprinkle with a little fresh cracked pepper.
(For a non low GI version, toast a thick slice of bread and place underneath spinach mix)
