Marinated Vegetables Salad with Feta - Serves 6
4 medium carrots, cut into matchsticks
200g fresh green beans, sliced chunky
200g snowpeas, topped and tailed
200g mushrooms, peeled and sliced
3 eshallots, sliced
1 punnet cherry tomatoes, halved
1 teaspoon garlic, minced
1 tsp wholegrain mustard
2 tablespoons balsamic vinegar
1 tablespoon lemon juice
2 teaspoons olive oil
salt and freshly ground black pepper
50g feta cheese (skim preferably)
1. Blanch the carrots and beans in boiling water for 3 minutes, add in the snowpeas for a further 2 minutes. Drain and run under cold water to stop them cooking.
2. Combine all other vegetables with the carrots and beans. Add feta and stir through
3. Combine all the ingredients of the marinade into a shaker container, shake vigorously to mix through. Pur over the vegetables. Serve.
*This is a great salad for BBQ's and goes great with the Lite Beef Lasagne recipe! It is also great if you have a 'hungry' day.
