Cinnamon and Date Muffins

Cinnamon and Date Muffins - serves 8

2 cups Self-Raising flour
1/2 teaspoon mixed spice
1/2 teaspoon cinnamon
1/2 teaspoon bi-carb soda
4 teaspoons brown sugar
1 tablespoon golden syrup
1/2 cup boiling hot water
1 ripe banana, mashed
1 cup low-fat milk
90g pitted dates, diced

1. Pre-heat oven to 180*

2. Sift the flour, spices & bi-carb into a bowl.

3. In another bowl combine the brown sugar, golden syrup and hot water until sugar is dissolved. Add the banana and milk. Add this mixture to the flour mixture and stir until just combined. Fold in the dates. *Take care not to over mix as muffins will be tough.

4. Spray your muffin tin with cooking spray and divide the mixture evenly between 8. Bake in the oven approximately 20 minutes or until the tops are lightly golden. Cool.

**Suitable to freeze.

they sound so delish ally! will definately have to try them
the curry beef pies could also be served with broccoli or green beans too. mmmmm.

about the muffins: can apple be used instead of bananas? theyre just so expensive lately and dont look very nice at all. :S its pretty sad that my 8 month old heidi has never tried a banana! lol.

can't see why apple can't be used Kate. I would use the tinned apple as a replacement or maybe even 1/2 cup apple sauce maybe/?? Not too sure, I may have to experiment over the weekend and let you know!! :lol:

Yes bananas are sooooo expensive!!

Hi Kate, I experimented with the Cinnamon and Date Muffins today. They work out great with 1/2 cup apple sauce in place of the banana. Just mix the bi-carb in with apple sauce (it froths up) and then add that to the hot water mix with the milk. Happy baking!!

ah thanks for that ally! glad they were nice! will definately have to write that one out and then make it- knowing my luck ill curdle the milk or something haha.
