White wine and Dijon Chicken

I got this recipe out of the CSIRO diet book - the liquid the chicken cooks in to get it's flavour is all but kj free!

Ingredients (per serve)
100g Chicken breast
1/2 medium tomato, diced
1 tablespoon fresh lemon juice + 1/4 rind of a small lemon
1/8 cup chicken stock
1/4 tablespoon dijon mustard
1/16 cup white wine

1. Preheat oven to 180degrees
2. Place chicken in a single layer on the bottom of a baking dish (sprayed with cooking spray)
3. Spinkle with diced tomatoes
4. Combine the rest of the ingredients in a bowl and then pour over the chicken
5. Cover with foil and bake for 30-45 minutes depending on the thickness of the chicken

Approximate nutritional values (this isn't given in the book, I add up the raw ingredients to come to this figure):
Kilojoules: 697
Fat: 3.1
Sat fat: 0.5
Carbs: 5.4g
Protein: 24.6g
Cholestoral: 50mg
Sugar: 3.5g
Sodium: 166.6
Calcium: 18.4
Fibre: 1.0
