2 cups long grain rice
*1 tbsp sesame oil*
300g chicken thigh (or breast if you prefer) fillets, diced small
1 rasher (40g) very lean bacon
2 cloves garlic, crushed
2 tsps fresh ginger, grated ( I use 2 tsps bottled one)
1 small fresh red chilli (again I use bottled)
1 egg, lightly beaten with 1 tbsp cold water
1 capsicum, diced
1 large carrot , cut into matchsticks
1 cup frozen peas
2 tsp five spice powder
1 tsp ground coriander
1/2 tsp ground cumin
250g bean sprouts, washed
6 shallots, sliced
3-4 tbs soy sauce (to taste)

1. Cook the rice until tender, drain well and cover with tea towel to keep warm (alternately cook in microwave until water is absorbed)

2. Cook egg omlete style and slice in small strips.

3. Heat the sesame oil in non-stick pan or large wok. (*if you have a non-stick wok you may not need as much or any oil) Add the chicken and bacon and saute until browned, add garlic, ginger and chilli and cook for 2 minutes. Add the capsicum, carrot and peas and cook for antoher 2 minutes. Stir through the spices. Add the cooked rice, bean sprouts, shallots and soy sauce, blend through and cook for 3 minutes or until well combined and heated through. Stir through egg. Serve immediately

** I usually add some extra carrot and capsicum, just not peas as they have a higher count than 'free' veg.

yummo ally!! im definately going to print all these recipes off and add them to my recipe book :) theyre so yummo
