Del's Pork Parcels

Del's Pork Parcels - Serves 4 - Suitable to freeze

400g lean pork, diced
1 tsp fresh ginger, grated
1 tsp sesame oil
250g mushrooms, finely diced
1 red capsicum, diced
1 large onion, diced
125ml low-fat unsweetened plain yoghurt
1 tbs cornflour
1 tbs sweet chilli sauce
salt and freshly ground black pepper
12 sheets filo pastry
1 egg white, lightly beaten
sesame seeds to garnish

1. Saute the pork and ginger in the oil in a non stick pan until browned. Add the mushrooms, capsicum and onion to the pan and saute until almost cooked. Cool. (I put the mix in the freezer for 20 minutes)

2. Mix together yoghurt, cornflour, chilli sauce, salt and pepper. Add yoghurt mix to pork and combine well

3. Lay 3 sheets of filo on top of each other. Place 1/4 of the mixture at the end of the filo. Fold the filo sheet over the mixture once, then tuck in sides. Continue rolling to make a parcel. Repeat to make 4 parcels. Lightly spray an oven proof dish or tray with cooking spray ( I line my tray with glad bake paper). Place parcels on tray and spread with egg white ( can use cooking spray if you prefer) then sprinkle with sesame seeds. Bake for approximately 30 minutes at 180*C or until browned. Serve with salad or vegetables.

**If you freeze them, just thaw and reheat in the oven and they will crisp up again.
