I found this recipe from Laura harrison who is a nutritionist for Priority one Ladies Health and Fitness Studio
makes 12 patties
250g frozen spinach
1 egg lightly beaten
1 teaspoon each of thyme and oregano
pinch of salt and pepper
600g chicken mince
2 tablespoons olive oil
1 clove garlic crushed
Thaw spinach, squeeze out excess water and drain on paper towel.
in a large bowl combine mince, spinach, breadcrumbs, fetta, egg, herbs, salt & pepper & garlic. Shape mixture into patties- should make about 12
heat oil in frypan on medium. cook patties for 4-5 minutes on each side. drain on paper towel.
serve with salad or steamed vegies.
