Chicken, Spinach and Fetta patties

I found this recipe from Laura harrison who is a nutritionist for Priority one Ladies Health and Fitness Studio

makes 12 patties

250g frozen spinach
1/3cup breadcrumbs
1 egg lightly beaten
1 teaspoon each of thyme and oregano
pinch of salt and pepper
600g chicken mince
50g fetta
2 tablespoons olive oil
1 clove garlic crushed

Thaw spinach, squeeze out excess water and drain on paper towel.

in a large bowl combine mince, spinach, breadcrumbs, fetta, egg, herbs, salt & pepper & garlic. Shape mixture into patties- should make about 12

heat oil in frypan on medium. cook patties for 4-5 minutes on each side. drain on paper towel.

serve with salad or steamed vegies.

I know I am a bit late in asking a question about this post - but did anyone ever make these? If so were they yummy? And one more ... does anyone know the fat content of these????

Oh wow these look so yummy. Yes would love to know fat content (just so I don't eat too many in one sitting) but I think I'd make them anyway LOL. Love anything with chicken, spinach and feta!!
