Pork Sang Choy Bow

1 tablespoon peanut oil
600g pork mince
2 cloves garlic- crushed
4 shallots thinly sliced
1 carrot, peeled and rated
2 tablespoons oyster sauce
8 small cos lettuce leaves

Heat oil in a large frying pan over a medium heat. add mince and stir fry for 4-5 minutes or until cooked, breaking up mince with a spatula. add the garlic, stir fry for a further 1 minute. transfer mixture to a bowl and stir through shallots, carrots and oyster sauce. divide mixture evenly between lettuce and serve immediately.
