I had a wonderful cooking adventure in my kitchen last night. This recipe is highly experimental (ie, I made it up!), but here's what I did.....
200g Textured Vegetable Protien (TVP)*
2 large onions
5 cloves garlic (I may regret putting this much but anyway )
1kg tomatoes, finely chopped or put in food processor
2 tablespoons tomato paste
1 veggie stock cube
Basil, oregano, thyme... not sure how much, just lots!
Soak the TVP in hot water for about 15 minutes until the water is absorbed, adding more water if needed. Drain and rinse before adding to recipe.
Fat free fry the onions and garlic in the stock (use a little water and throw in the stock cube) in covered saucepan.
Add all the other ingredients
Simmer for about half an hour.
Cool, put in fridge, and eat within two weeks...
* I have found Sanitarium brand TVP in the supermarket....it's okay but contains artificial flavourings and tonnes of salt. A better brand I found is Lamyong which I got online from the Cruelty Free Shop
Also try this recipe with brown lentils in place of the TVP... just as yummy
If you're cutting back on carbs and don't want to have it with pasta, try it with steamed shredded cabbage or cauliflower.
