Stuffed Capsicum

On friday night i decided to make my own type of stuffed capsicums. they were really yummy and filling, i served them with a side of salad and we couldnt get through them!

500g chicken mince
2 red capsicums
1 grated carrot
1/2 cup tasty cheese grated
1/2 cup chopped shallots
salt and pepper

1. mix in a bowl the mince, carrot, 1/2 of the cheese and shallots. add salt and pepper. you may also add chopped button mushrooms to this mixture (i did to mine but not to micks) mix well with hands.

2. wash capsicum cup off top and discard. hollow out the capsicum and wash inside.

3. stuff mixture into capsicum and sprinkle remaining cheese ontop.

4. put in a oven tray which has been lightly sprayed with canola spray

5. slow cook for 60 minutes on 120c oven (you'll know its ready because the capsicums start to soften and the chicken is cooked)

***this makes 2 capsicums but you could make 3 as i had left over chicken mixture that i made insto rissoles and cooked on my george foreman grill to nibble on later! ***

***very filling and you could also cut the capsicum in half long ways and just do half capsicums instead of the full ones***

Stuffed capsicums are fantastic and filling. Every time I make them they come out different. :lol: They can be a great vege meal too if you don't want meat in them.

Sounds like a great alternative. I normally do a vegetarian stuffed capscium.

What a great idea... I was inspired to try my own stuffed capsicums last night. I put in: 100g TVP, 2tsp No Egg (equivalent to one real egg I think), 4 tsp cornflour, and a teaspoon each of chili powder, lemongrass and garlic. I just dehydrated the TVP and cooked it for a bit in a saucepan with the other ingredients. Then of course put it into the capsicums and cooked them in the oven... it made two. Hopefully they are yum (haven't tried yet :oops: )
