Barbecued Chicken Burgers

Taken from magazine 'super food ideas' october 2006


Barbecued Chicken Burgers
serves 6

500g chicken breast minced
2 eggwhites
1 teaspoon smoked paprika
1 teaspoon ground cumin
2 garlic cloves crushed
2 green onions sliced
2/3 cup coriander leaves chopped
olive oil cooking spray
6 corn tortillas
1 1/2 cups shredded lettuce
2 tomatoes sliced
1/2 cup mild tomato salsa to serve

1. combine chicken mince, eggwhites, paprika, cumin, garlic, onions, 1/2 cup coriander leaves and pinch of salt in a bowl. mix well. using 1/3c up per burger shape mixture into six 7cm patties

2. preheat barbecue plate or non stick frypan over medium heat. spray both sides of patties with oil. cook 4-5 minutes each side or until cooked through. transfer to a plate, cover to keep warm.

3. spray both sides of tortillas with oil, barbecue for 1 minute each side or until warmed. divide among plates. top each with 1 patty, lettuce, tomato, remaining coriander and 1 tablespoon salsa. fold over half of the tortilla and secure wtih a toothpick. serve.

Mmmmmmmm, yummo, these sound delicious Kate, thanks for sharing. I'll have to look at my daily carb allowance to see if I could allow these for my main meal in the evening - I hope so (drooling!)

haha yeah i think my mums super food idea magazine got a bit of drool on it too when i was looking at the recipe. :) if you are allowed to have it and make it let me know what you think of it!!

oh they sound yummy Kate!! am going to have to try them out for sure!!

Hayley with your carb allowance if the torilla is too much are you able to have the burgers with a salad?? Sorry I hope I am not being too much of a treacle beak and prying!! :P

Absolutely, I can have these with sald - although the tortillas made it sound even better :lol: !

I made some thai chicken patties, which I found the recipe for on the official TF forum, and they were also delish...maybe I should post the recipe for those on here?

I love super food ideas!

I made these last week and they were absolutely yummo! I had them on toasted turkish bread with hommus as a sauce and it was absolutely awesome!

they have some great recipes in super food ideas and the magazine is really cheap. some recipes have nutritional info others dont. but that looks yummo, havent made it yet though
