TF-friendly Thai Chicken Patties

Thai Chicken Patties

500g fresh mince chicken

1 red chilli, roughly chopped

2 cloves garlic, roughly chopped

3 teaspoons of minced ginger

1&1/2 tsp of ground cummin

1&1/2 tsp of ground coriander

bunch of fresh coriander

2 tbsp of fish sauce

1 egg

3 spring onions, chopped finely

Put the whole lot apart from the spring onions in a food processor and blend till mixed well. Stir through the spring onions. Shape into balls/pattys. (Putting a bit of oil on your hands stops the mix sticking when you shape the balls!) I make mine about golf ball size, they flatten out as they cook. Brown on both sides in non stick frying pan. Then put in the oven for a few mins to finish cooking.

Serve with salad or veggies with soy sauce based dressing. Very tasty and filling. 500g of mince makes about 10 golf ball size patties. 3 patties, including the egg, meets the allowed protein serve on TF diet.

I varied the recipe for these a little: I left out the fish sauce as I dont care too much for the taste of that; I grated the zest of 1 lemon and added that to the mix, I also put in a tablespoon of light philli cheese to make the mix a bit creamier; you could also add a tablespoon or more of sweet chilli sauce instead of the whole red chilli, as this makes them a little sweeter and very tasty too, although the sweet chilli sauce has more carbs etc that a fresh whole red chilli.....up to you, but very very yummy served on a bed of baby lettuce leaves! Enjoy.

that sounds yummo hayley thanks for that. i dont think id add the fish sauce either, im sure they would be yummy to serve at a birthday party along with sausage rolls and cocktail frankfurts too. great recipe :)

I agree Hayley fish sauce is yuk!! (sorry to all the fish sauce lovers out there!! LOL) I find it is way too salty for me!! Those patties sound delish!!

Just curious if anyone has tried these yet? Slimmindown, did you cook them?

I'm going out to the shop to buy the ingredients today and will make them for our tea - I love these!
