Salmon with Feta - Spinach Topping & Veg

Salmon with Feta - Spinach Topping & Veg

ingredients for 1 pers.:
150.0 g Broccoli, cooked, boiled, drained, with salt
30.0 g Cheese, feta
150.0 g Fish, salmon, pink, raw
30.0 g Onions, spring or scallions (includes tops and bulb), raw
5.0 g Parsley, raw
1.0 g Salt, table
1.0 g Spices, pepper, black
20.0 g Spinach, raw
30.0 g Yogurt, low fat, plain

Preparation
1) Preheat the oven to 180C/160C Fan or gas mark 4.

2) Mix 1 tbsps of of fat yogurt, 30g of low fat feta (crumbled), 1 chopped spring onion, 1 tsp of parsley and a little spinach (chopped) together. Season with salt and pepper.

3) Put a skinless piece of salmon in an oven proof dish. Then spoon the sauce over. Bake for about 20 mins or until cooked.

4) Serve with steamed broccoli.
