Pepper chicken

Ingredients
Chicken
Cauliflower, tomatoes, onions, ginger garlic.
Green chillies
Coriander /mint leaves
Bay leaves
Cinnamon
Method
1. Make your own curry powder, fry black pepper corns, coriander seeds, and dry red chillies.
2. Make a powder.
3. Heat the pan, spray oil.
4. Sauté bay leaves and cinnamon.
5. Add green chillies.
6. Add the chicken, sauté for a while.
7. Add in veggies.
8. Add to the above pepper, coriander, dry red chillies.
9. Add salt and water
10. Cook till done
11. Season with mint and coriander.

Thai chicken stuffed mushrooms

Ingredients
Chicken (allowance), roughly chopped
Lemongrass
Thai basil (or normal)
Vietnamese mint
Coriander leaves
1/2 - 1 tea fresh ginger, peeled and roughly chopped
1 clove garlic, peeled and sliced
Red chilli (can use dried)
1 large field mushroom
Method
1. Pre-heat oven to 180 degrees
2. Weigh all ingredients before proceeding
3. Place a piece of baking paper on a tray or oven proof bowl
4. Place chicken into a blender and mince. Keep the blenders going for around a minute or so. This will not only finely mince the chicken; it will start working the protein in the meat which will help hold the 'farce' together.
5. Add the ginger, garlic and lemongrass and blend for a further 10-20secs or until broken down (not chunky)
6. Add the herb leaves plus mushroom stalk and pulse until distributed through the chicken mix
7. Place the raw mushroom onto the baking paper then fill with the chicken mixture
8. Bake for approx 25mins or until the chicken is cooked through.

Baked tomato meatballs

Ingredients
Mince
2 crisp breads
Onion
Chopped herbs
Garlic cloves
Tomato
Water

Method
1. Place beef mince, breadcrumbs, green onion, oregano/herbs and garlic in a large bowl and season to taste (allowance)
2. Roll into balls
3. Cook meatballs for 10 minutes, until browned and cooked through.
4. Make tomato based sauce by reducing whole tomatoes in water / sprite
5. Put meatballs in a ovenproof dish and pour over tomato sauce
6. Put in oven and bake until hot.
7. Vegetables be added to either sauce, meatballs or served on the side.

Herb and Chilli Spread

Ingredients
2 bunches Mint
2 bunches Coriander
1 bunch parsley
15 green chillies
2 lemons
6 cloves of garlic
Jar
Method
1. Zest the two lemons and the juice them both.
2. Roughly cut the herbs up.
3. Roughly cut up chillies into chunks
4. In processor / blender place garlic, chillies and zest then pulse it till finely chopped.
5. Then add herbs and juice and pulse till it is all combined and then let blend into a nice paste like consistency.
6. Place into jar and keep it in the fridge.

Cabbage Rolls

Ingredients
Beef mince (allowance)
Cabbage (about 2/3 veg allowance)
Tomato
Onion
Garlic (1 clove)
Mixed herbs
Method
1. Dice onion finely.
2. Mince garlic.
3. Lightly spray oven dish with olive oil.
4. Preheat oven to 180C.
5. Peel several cabbage leaves from the head of lettuce.
6. Wash thoroughly and then place in boiling pot of water for about 3 mins / until just soft.
7. In a bowl, mix onion and garlic through the beef mince.
8. Pull cabbage leaves out of water and lay on a plate. Place even amounts of mince mixture on each one, then roll up the sides and tuck the bottoms under.
9. Place in oven dish.
10. In another bowl or cup, squash or finely dice tomato and add a small amount of water. Microwave for 1min and then add 1/2 tsp mixed herbs and mix well.
11. Pour over cabbage rolls, cover dish.
12. Place in oven on 180C for about 20 mins.

Chicken Cacciatore

Ingredients
Chicken
Strips of onion
Green pepper
Tomato
Mushrooms
Oregano
Garlic
Thyme
Basil
Salt
Pepper
Method
1. Take your chicken and salt and pepper, put it aside sauté your onion, green pepper, mushrooms, tomato and herbs in the frying pan, take those out of the pan grab your chicken plop it in the pan add some more herbs to it if you wish.
2. Once chicken is not raw on the outside - grab the tomato bit (just the tomato because it should be slimy and ready to come away from its skin, take that and rub it on the chicken on both sides, add water to the pan till it half way cover chicken, throw your other veggies in the pan and let it simmer on low.
3. It comes out kind of stewed, like with your coarse cut veggies to soak up the Mediterranean mix o' flavours.

Indian inspired beef

Ingredients
Beef strips
Onion
Capsicum
1/2 tomato (chopped, no skin)
Celery (optional)
Indian spice mix (Garam masala)
Cumin
Pepper
Cinnamon
Ginger powder
Ground cloves
Chilli powder (optional)
White vinegar
Water
Method
1. Slice onion, capsicum and celery.
2. Remove skin and seeds of tomato.
3. Cook beef in hot pan with spray oil until browned.
4. Add onion and allow to brown slightly. Add all other vegetables and cook.
5. Add spices whilst vegetables are cooking, a shake of each should suffice, and add a dash of vinegar (approx 1-2 tbs) and the same amount of water.
6. Allow to cool down for 1min or so, to allow water and tomato to make a sauce for steak.

Omelette (mushroom)

Ingredients
Egg
Veggies
Mushrooms
Method
1. Brown mushrooms in a pan.
2. In a bowl, whisk 1 egg, salt and pepper and 1/2 eggshell of water until aerated.
3. Take veggies out of pan spray pan (small) with olive oil - pour in egg mixture.
4. Once omelette can be lifted off pan - add veggies onto one half - then fold over the other side.

Chicken Kiev

Ingredients
Chicken breast
Clove garlic
Spinach
Crisp bread
Method
1. Crush crisp breads in food processor
2. Chop spinach and garlic
3. Sauté spinach and garlic on low heat in frypan- until spinach has wilted and garlic slightly browned, allow to cool
4. Cut a pocket into chicken breast
5. Stuff chicken breast with spinach and garlic filling
6. Use tooth picks to close the pocket
7. Roll in crumbs
8. Cook in frypan until chicken is cooked through.

Peppered beef steak

Ingredients
Beef steak cut into cubes (allowance)
Cracked pepper to taste
Onion (allowance)
Tomato crushed (allowance)
Mushrooms (allowance)
Zucchini cubed (allowance) optional
Garlic
Crackers crushed x 2
1 cup water
Method
1. Cut steak into cubes
2. Cut zucchini into cubes
3. Chop onion
4. Crush crackers
5. Crush tomato
6. First spray a saucepan with cooking spray and put onto med-high heat
7. Toss beef cubes in cracked pepper until coated and toss in pan until seared and sealed.
8. Remove pan from heat and lower hotplate temp to medium
9. Into pan add onion, tomato, mushrooms, zucchini and garlic and stir constantly while turning heat back up.
10. Add in water and crushed crackers, stir while bringing to the boil
11. Once boiling lower heat again and add in beef pieces,
12. Simmer until cooked to taste and serve

Chilli Garlic Prawns with Rocket and Balsamic Vinaigrette

Ingredients
For the dressing you need:
1tbsp balsamic vinegar
Chilli flakes
Garlic
Parsley
Coriander
1 sweetener tablet
Mix, heat in microwave for 30 seconds and set aside in fridge until cool.
For the prawns you will need:
Raw green prawns
Ground chilli
Crushed garlic
Oil spray
Method
1. Slice the prawns down the centre of the spine so the edges will curl in, but you can just cook them without cutting.
2. Spray the pan with a little oil spray and heat it up,
3. Add the chilli and garlic and sear a little
4. Add the prawns and cook them over medium heat until they go pink and the edges curl, and the prawns are a little brown.
5. Serve them hot over a rocket, tomato and red onion salad with the balsamic dressing.

Steak with Mushrooms

Ingredients

Steak
Garlic clove
Mushrooms
Method
1. Finely chop garlic
2. Chop Mushrooms to desired thickness
3. Cook the steak in a fry pan with a little spray oil.
4. Once one side has cooked through (should be about 5min or so) turn the steak, make sure the pan is hot, and add the garlic and mushrooms.
5. By adding the mushrooms to a HOT pan, you should get some browning on the mushrooms before they release their water.
6. Cook until mushrooms have softened, and serve
