Tofu Scrambled (Not) Eggs

This SOUNDS gross, but it is delicious... trust me :wink:

250g tofu
2 teaspoons No Egg (or one real egg I guess)
1 teaspoon tumeric (for a nice yellow colour)
Chives (as many as you want), or parsely, but chives are better
60g soy cheese (optional)

Mash up the tofu in a bowl
Add the No Egg and a couple of tablespoons of water (add more water if needed to get the right consistency - just don't put too much!)
Add the tumeric and chives
Put into a non stick frying pan and cook for about 5 mins (if you want, add soy cheese to frying pan and stir until it melts through)

Makes two serves... some for now, some for later :D

Very quick, high protein, low carb brekkie - yum!

Mmm that does sound good. I have made something similar before but I think I added 1-2 egg whites not quite sure. I likes my tofu.
