FRENCH ONION CHEESEBALL
SERVES 4

You can serve this at a party or use it for lunch

1 cup smooth cottage cheese (low fat ricotta if you prefer)
100g low fat cheese, grated
2 tablespoons light sour cream
1 packet French onion soup mix
3 sticks celery, finely diced
1 small red onion, finely diced
poppy seeds

1. Mix all teh ingredients together except the poppy seeds.

2. Sprinkle the poppy seeds onto a tray or baking dish.

3. Place the mixture on top and gently shape it into a ball. The mix may be sticky but it will firm up in the fridge. Roll the ball in poppy seeds.

4. Leave the ball in the regrigerator for a minimum of 1 hour. Serve with crackers or Lavish Bread Crisps and vege sticks.

These = 2 serves of protein and 40 calories when dished out to serve four!!

Nice one Ally I will try that. I have my own cheese ball recipe from years ago but it is not health conscious friendly. I will have to see if I can modify it but I like yours a lot and sounds easy too.

Mmm no I haven't. I usually roll mine in finely chopped walnuts. I'm thinking the LSA mix would be nice too.
