ROAST PUMPKIN DIP

ROAST PUMPKIN DIP
SERVES 2


400g pumpkin
2 tsps taco seasoning
2 tsps crushed garlic
juice of 1/2 lemon
salt to taste

1. Preheat oven to 200*C

2. Wash and de-seed the pumpkin and roast (skin on) until soft.

3. Peel off skin and mash pumpkin. Add the other ingredients

Chill. Serve with Lavash bread chips of chunky veges!! YUMMO!!

Can't I just eat the entire pumpkin?

LOVE roast pumpkin, thanks for the recipe Ally, it looks great! If I can restrain myself, I will try making it! :lol:

Oh yeah pumpkin in any form is a goody. That is a great recipe.

I made this the other day... it is definitely delicious. Maybe it is too delicious though as I fear I may have eaten too much :lol: :roll:
