I just made a pot of my fav pumpkin soup and thought I'd share
1 whole butternut pumpking, peeled and chopped
2 carrots peeled and chopped
1/4 head cauliflower, chopped
1 onion, chopped
1 tbs chicken or vege stock powder
1 tsp ground ginger
3 bay leaves
cracked pepper, salt and herd to taste.
chuck it all in a pot and simmer for about an hour then pick out the bay leaves and blend the rest until smooth!
The cauliflower gives it a creamy texture and it is yummy!
No fat, and its 100% veg, so on any diet that gives you 'free' veg , its guilt free!
