Here's an interesting dish. It's like a fruity chicken dish, pretty tasty and sweet.

1 lb. chicken breasts
2 cups pineapple tidbits
1/4 cupe pineapple juice
1 cup chopped green pepper
1 cup water
1 tablespoon cornstarch
2 tablespoons apple cider vinegar
2 tablespoons brown sugar
1/8 teaspoon garlic powder
1/8 teaspoon ginger
1 medium banana
1/4 cup slivered almonds
1 cup uncooked rice
(for a healthier choice, use cooked brown rice - not the instant kind)

In a large sauce pan, cook rice according to package directions. In a large skillet sprayed with vegetable cooking spray, saute chicken for 5 minutes until tender. Stir in pineapple and green pepper. In a small bowl combine the pineapple juice, water, cornstarch, vinegar, brown sugar, garlic, and ginger. Stir well. Pour mixture into chicken mixture. Mix well to combine. Continue cooking 5 minutes or until thickens. Fold in banana and almonds. Heat thoroughly. Serve over cooked rice.

Makes 6 servings.

Sounds lip smacking, am going out for those ingredients today.
