PUMPKIN PIE

This recipe is from the Symply Too Good Too Be True recipe book number 5 by Annette Sym

Elyn....this is for you!! A low fat/cal pumpkin pie recipe!!! Please note that a 15ml tablespoon is used in this recipe

Pumpkin Pie
Serves 12


PASTRY: 1/4 cup SR flour
3/4 cup plain flour
2 tbs sugar
2 tbs (30g) Flora Light margarine
1 tbs skim milk
1 egg white
cooking spray

FILLING: 3 cups (450g) raw pumpkin, small dice
2 whole eggs
2 egg whites
1/2 cup sugar
1 tsp each of cinnamon and nutmeg
1 1/2 cup skim milk

DIRECTIONS: Preheat oven to 200*C. To make pastry: In a medium size mixing bowl combine flours and sugar together. Add melted margarine to milk, beat in egg white with a fork pour into flour. Fold together, if needed use your hands to help blend ingredients. Place onto a well floured surface and roll out to fit a 23 cm pie dish that has been coated with cooking spray. Roll up pastry using a rolling pin, lift into pie plate. Trim around the edges. To make filling: Microwave pumpkin with a little water on HIGH for 10 minutes or until pumpkin is cooked. Drain and mash (should equal about 1 1/2 cups). In a large mixing bowl beat eggs and egg whites together with sugar for 1 minute using an electric beater. Add pumpkin, cinnamon, nutmeg and milk mixing umtil well combined. Pour over pastry and bake 1 hour and 15 minutes. Leave to cool
