600g skinless chicken breast (cut into strips),
1 cup sliced onion,3 cups sliced mushrooms,
1 x 375ml can evaporated light milk,
2 level teaspoons beef stock powder,
2 level tablespoons tomato paste,
1 level tablespoon paprika,
2 gherkins (finely chopped),
1 level teaspoon crushed garlic,
1 level tablespoon cornflour,
salt and pepper to taste
Coat a large non-stick fry pan with cooking spray, add garlic and chicken strips, toss together until browned. Add onion to pan and cook 2 minutes, place mushrooms into pan and cook a further 2 minutes. Add gerkins, stock powder, tomato paste, paprika and stir well. Blend cornflour into milk, add to pan stirring continuously until sauce boils, salt and pepper to taste.
Replace chicken with lean beef, or replace chicken with veal.
