Makes: 5 1/2 cups (which is a lot!)
INGREDIENTS:
1/3 cup honey
1 tablespoon finely grated orange rind
1/3 cup orange juice
2 cups traditional rolled oats
1/2 cup bran cereal
1/2 cup shredded coconut
1/2 cup pumpkin seeds (pepitas)
1/2 cup sunflower seeds
1/4 cup sesame seeds
1/2 cup chopped almonds (or nuts of your choice)
METHOD:
Preheat oven to 180°C. Line a large, shallow baking dish/tray with baking paper. Place honey, orange rind and orange juice in a saucepan over medium-low heat. Cook, stirring, for 2 to 3 minutes or until honey has melted.
Combine oats, cereal, coconut, pumpkin seeds, sunflower seeds and sesame seeds in a large bowl. Add honey mixture. Toss to combine. Spread mixture into prepared dish.
Bake for 20 to 25 minutes or until golden and crisp. Cool on tray. Store in an airtight container for up to 2 weeks.
