Spiced Tomato & Chickpea Casserole

Ingredients:
1 onion, roughly chopped
1 teaspoon each coriander & cumin
1 tablespoon curry paste
zucchini, capsicum, broccoli or other green veg, chopped
400g tin chickpeas
800g chopped tomatoes

Method:
- Sautee onions for a minute or so
- Add spices, curry paste and veggies
- Add chickpeas and tomatoes, simmer for about 15 mins until veggies are tender
- Serve with couscous and dollop of natural yoghurt

hey sarah sounds yum but do you know what i could substitute the chickpeas for?

I guess you could use any kind of beans you like, wouldn't necessarily have to be chickpeas. You could use anything you want really - be creative :D

i avoided the kids at school who had tuna and who had devon and tomato sauce sandwiches .... :evil: :shock: :P

maybe some chicken breast in it?
