4 bean mix

I have loved reading all the healthy recipes you have all put up - thanks! This one is full of protein and very healthy. I used to make a big bowl of it and when i felt like nibbling it would do the trick. Im not sure about quantities because I just add till it looks right - but give it a go.

4 bean mix - drained
chopped tomatoes
diced red onion
diced avocado
diced cucumber (optional - I have made it plenty of times without)
dressing - french or italian
squeeze of lemon
pepper
and fresh herbs (again optional - depending if I have them in the fridge)

This was delish! I made a batch of this today and popped it in the fridge for nibbling on when hunger struck. It was absolutely lovely.
Has anyone else noticed how much extra planning you need to do when you're wanting to lose weight? I mean, it's simple enough to grab a quick bite to eat if you don't care what you put into your mouth, but when you're watching and ensuring that you only put quality fuel into your body, suddenly it's a big hassle.

When you first start off it is a hassle Dee, but as you start to make healthier choices each day, it just becomes part of your everyday life to know you have to plan meals and have some great emergency backups!!

I agree about the just picking up anything meal....I know that is what got me into so much trouble in the first place!!! :wink:

Glad you enjoyed it Dee! Now that I have written the recipe on here I really should make some to keep in the fridge - havent made any this weight loss attempt. I know what you and Ally mean about just 'grabbing whats in the fridge' though Snow peas were on special yesterday so I got a huge bag full and have found they are great to snack on - by itself or with tzaki I love carrots, celery and cucumber too, but sometimes it seems like such a hassle to get the chopping board out to cut them up - so much easier to grab a slice of cheese or something. Snow peas are my new love - just grab a handful, rinse and eat!
