Curried Tofu

250g Tofu, cubed
1 large onion, chopped
1 tsp margarine or oil
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp tumeric
1/2 tsp chili powder
4 tbsp water
2 tbsp tomato paste (the ones with no added salt are good :wink: )
2 tbsp natural yoghurt

Saute the onion in the marg/oil until brown
Lower heat and stir in spices
Add tofu and stir until it's coated in the spices
After a minute or two add water and tomato paste
Cover and simmer for 10 mins
Stir in yoghurt
Serve with brown rice if desired

Makes two servings.

Very quick to make and very yummy!

great! and if you all refer to kate's daily tips thread you will see that one of the tips is to make extra portions to save for the following day and because this recipe makes 2 servings- theres your lunch for tomorrow!
