Roasted Vegetable Pizza

After potato chips pizza is my biggest downfall. So I've been working on some healthier versions so that I can still enjoy this food. Here's my favourite creation so far

200 grams Pumpkin diced
1 Capsicum sliced
1/2 Spanish Onion sliced thickly
1 12 inch Pizza Base (Tip Top thin if available)
100 grams Low Fat Ham diced (Weight Watchers brand)
1 Tomato sliced
2 tablespoons Barbeque Sauce
100 grams Coon Extra Light & Tasty Cheese grated

Put prepared vegetables in a small, oven-proof dish and spray lightly with cooking spray. Sprinkle with fresh herbs if you have some. Bake for 30-45 minutes or until cooked and allow to cool.

To assemble pizza spread the base with barbecue sauce, top with tomato slices then roasted vegetables, then ham then grated cheese and bake for 20 minutes or until cheese is melted and base is crispy (I use a pizza stone...makes the base extra-crispy)

NUTRITIONAL INFORMATION
With Tip Top thin base per slice: Cals 152, Fat 2g
With Tip Top thick base per slice: Cals 178, Fat 2.3g
With Quattros thick base per slice: Cals 178, Fat 2.7g

If I could find a ticker for measurements it would say I'm on the way from a waist measurement of 134cm to one of 70cm (currently at 129cm)

that looks really yum- ive never had pumpkin on a pizza before- but im sure id love it!

Try a layer of zucchini slices on the base too - it is SOOOO yummy and smells awesome when cooking!!
I use pita breads for my bases too. The Tip Top Fill Em's I think they are called are extremely low in kilojoules (400kj for a small wholemeal) and they taste beautiful!

My personal favourite is crushed canned tomatoes for the base sprinkled with herbs, turkey, cherry tomato, fresh pineapple and fetta or bocconcini cheese. Mmmm!

you don't like it?!!? oooh i looove zucchini!! i love pretty much any vegetable tho haha :P
we grow them each summer, get like 1.6kg zucchini's if we're not careful and forget to pick em :S :S

Haven't tried zucchini on pizza before, sound interesting. Pumpkin on pizza is yum. I can't go past a veggie pizza with artichokes on it... they are delicious (on pizza that is!)

Can't remember the last time I had pizza :shock:

Piece of pizza... try saying that 10 times :lol:

I've never actually tried artichoke!!! I'm really curious as to what it tastes like.. I'm absolutely craving roast veges now so I might have to have some with dinner :D

I have pizza all the time - but only my special homemade pita pizzas :D I think they're better than takeaway ones anyway :D
