1kg potatoes peeled
cooking spray
1 cup 25 % reduced fat grated tasty cheese
4 tbsp grated parmesan cheese
1.5cups skim milk
2 x 30g sachets four cheese sauce (try continenantal)

1. preheat fan forced ocer to 200degrees

2.peel potatoes and slice thinly, place half the potato slices in a lasagne dish that has been coated with cooking spray

3. sprinkle hald of the grated cheese and half of the parmesan cheese over the potatoes, top with remaining potatoes

4. In a small saucepan bring milk to boil, add sauce sachets and whisk together. pour over potato. sprinkle over the remaining parmesan cheese and grated cheese. cover with foil (spray foil with cooking spray to avoid food sticking to it).

5. bake for 1 hour, remove foil and cook a further 10-15 minutes or until potato is cooked.

this is very similar to a recipe I make...except I use a packet of Cheese & Leek soup mix instead of the four cheese sauce.

Plus I usually add some other vegies...slices of carrot, sweet potato, capsicum etc.

Either way it is yummo and actually tastes better than those cream & fat laden versions you get at some take away places.

If I could find a ticker for measurements it would say I'm on the way from a waist measurement of 134cm to one of 70cm (currently at 129cm)

i like the french onion soup version as well mary, but i like to add naughties like sour cream and thickened cream :P

LOL yep! just for the record anyways :)

i never used to like sour cream growing up, but now i love it - and miss it! :(

cauliflower is good to use too- it does have any where near the amount of carbs as potatoes
